Universal Tomato Sauce


Ready for use jars of this sauce practically “live” nowadays in my refrigerator (and freezer – for longer term usage). I have picked up the idea once in a cooking magazine, and I am keeping using it and returning to it ever since. Cooking this sauce is very simple and it can later on be used for either a complete solution for a pasta sauce or a basis for a more complex pasta sauce. It can also be used as a basis for tomato soup or stew, pizza sauce, sauce for kebaps/burgers or even for tomato-based fish dishes. And, of course, it can also be consumed “straight from the jar” with a spoon :-)

Most important secret for making a successful tomato sauce is picking up very ripe and “sweet” tomatos. When such tomatoes aren’t available at the markets, it is better to use Italian canned tomatoes.

Following yields approximately 3 lilters of sauce.

Ingredients:

2 kilograms of very ripe (even soft) tomatoes
4 large onions
10 garlic cloves
6 carrots
Optionally – 100 gr. tomato paste  (photo shows the variant without the paste)
2 celery roots
2 parsley roots
4 tbsp. olive oile
1 beam of basil
Salt

Preparation:

1. Blanch the tomatoes, then peel them and cut into cubes.
2. Peel all other vegetables and cut into cubes as well.
3. Using a pan with a thick bottom, warm the olive oil and fry the onion (cut into cubes) until transparent.
4. Add all other vegetables except for tomatos and garlic cloves and cook for approximately 10 minutes, stirring periodically
5. Add the garlic and cook for a couple of more minutes.
6. Add the tomatoes (and the tomato paste), add salt/pepper and bring to boiling.
7. Reduce the heat and cook for 1.5 hours under lid.
8. Remove from the heat, add the basil leaves and then cook for 30 more minutes.
9. Using a hand-blender turn the cooked mass into a uniform puree.
I usually store the sauce in small jars (like the one on the photo) and keep it in the freezer. This way, when cooking any of the dishes that require it, I just take one jar and use it.
